Northern Fires is a dialogue between chefs and farmers; the dish and its components. Through this direct collaboration we bring the freshest ingredients to each plate, always at the peak of their season. We have simplified the process of sourcing our produce, meat, grain, oil, and cheese by forging direct relationships with local purveyors who are the leaders in their field. We take the time and maintain the flexibility that this requires, allowing farmers and producers to do their best work in concert with whatever challenges and bounty the season may bring.
